Marilyn S. Faulkner of the Williams Inn and Adam Brassard knew the three chefs were from The Williams Inn and identified chef Hans Mtz, center, and on the right, Benjamin Castro, but were unsure of the man on the left. A trip to microfilm found it was Jeffrey Lettre. Castro, on leave from the Balsams Grand Resort Hotel in New Hampshire, was training the cooks at the inn. Mrs. Faulkner reported he was showing the process of decorating the turkey with a base of sour cream and gelatin and trimmed vegetables pieces to make food art. The photo originally ran Nov. 22, 1996.
